Scalloped Corn

Scalloped Corn

From the Kitchen of: Ashley Richards

 

1/2 small onion

1/2 green pepper

1/4 cup butter

*Saute these in pan until tender


In a small greased casserole pan, add the above to:

1 can of cream style corn

2/3 cup milk

2 eggs

salt and pepper to taste

Sprinkle top with 1 cup of crushed cracker crumbs (You can add a few pats of butter to the top if you really want to add on the fat! )

Bake @ 375° for 35 minutes, or until firm

***For Christmas, instead of just 1/2 green pepper, use 1/4 green pepper and 1/4 red pepper to make it look festive!!
